This is the recipe I use to replace corn syrup in my recipes.
4.5 cups of pure cane non-gmo sugar,
3 TBS lemon juice & 2 cups filtered water.
Add it all to a stainless steel pan, needs to be at least 4qt pan or bigger.
Stir to mix, turn on heat to medium and stir until it just starts to boil.
Once it starts to boil STOP stirring and DO NOT stir again (it will cause it to crystalize),
Put your candy thermometer in your pan and watch until it gets to 225.
As soon as it hits 225 turn the heat off and let set for a few minutes.
Then careful funnel into a glass quart jar.
Let cool completely before putting in fridge.
Syrup will keep for months in the refrigerator.
